Best Chunky Monkey Bars

These Best Chunky Monkey Bars are a full-flavored chewy dense bar. They have a brownie texture but are just as delicious as my homemade banana bread. Best Chunky Monkey Bars can be baked in under 40 minutes and are a wonderful dessert for lunch boxes. This is one of the best ways to use up those ripe bananas sitting on the counter. 

Two kinds of chocolate make this best monkey bar extra rich and delectable. All you need to make these scrumptious Best Chunky Monkey Bars are sugar, butter, eggs, vanilla, bananas, flour, baking soda, salt, chocolate chunks, and chocolate chips.

Another popular way to use those ripe bananas is to make my popular Carrot Banana Bundt Cake.  It’s always a family favorite.

Preheat oven to 350 degrees. Let your ingredients come to room temperature.

With a hand mixer, cream butter, and sugars. Add the brown sugar first.

Then add the granulated sugar.

Mix well.

Add in the eggs.

Mix the eggs well with the hand mixer.

Add chunks of bananas.

Add flour.

Add the baking soda.

Add salt.

Mix well with a hand mixer.

Chocolate chunks are perfect for these Chunky Monkey Bars.

Fold in the chocolate chunks with a spatula.

Prepare a 9×13 pan with non-stick cooking spray and parchment paper. Pour Monkey Bar batter into the pan and spread evenly. Top with chocolate chips.

Bake for 30-35 minutes. Let cool, cut into squares. Check out how ooey-gooey that chocolate is! Grab a glass a milk and enjoy!

Best Chunky Monkey Bars

Serves- 20

Prep Time- 15 minutes

Baking Time- 30-35 minutes

 

INGREDIENTS

  • 1 1/4 cups packed brown sugar
  • 3/4 cup granulated sugar 
  • 1 cup unsalted butter, softened to room temperature
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 10 ounces dark chocolate chunks
  • 1/4 cup semi-sweet chocolate chips 

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars.
  3. Mix in the eggs, vanilla, and bananas.
  4. Add in the flour, baking soda and salt and mix together.
  5. Fold in the chocolate chunks.
  6. Prepare a 9×13 pan with non-stick cooking spray and parchment paper.
  7. Pour Monkey Bar batter into the pan and spread evenly. 
  8. Top with chocolate chips.
  9. Bake for 30-35 minutes.

Tips for making Best Monkey Bars:

  • Set all ingredients out to come to room temperature.
  • Use a hand mixer or KitchenAid, the batter is thick.
  • These bars will keep in a covered container at room temperature for up to 3 days.

How to store Best Chunky Monkey Bars:

After completely cooled off, wrap in plastic and then foil. Store in the refrigerator or freezer. Best Chunky Monkey Bars may be stored in their baking pan tightly covered with aluminum foil if they will be eaten in a few days. They should be removed from the pan and stored in an airtight container. Separate bar cookies with waxed paper between layers.
